In the case of a food allergy, the immune system of the affected person reacts to normally harmless foods with an excessive defensive reaction. The body forms defensive antibodies, mostly IgE, against certain protein components called allergens. Why the immune system in some people reacts exaggeratedly to certain food components has not yet been precisely clarified. In addition to environmental factors, hereditary probably also play a role here.
In IgE-mediated food allergies, allergic symptoms usually occur within a few minutes to two hours. The location of the reaction and how strongly they occur varies from person to person. Reactions often take place on the mucous membranes, for example in the form of inflammation of the intestinal mucosa, watery and swollen eyes, runny nose, sneezing, coughing, or asthma attacks with shortness of breath. In addition, skin rashes, eczema, wheal formation, and itching as well as diarrhea, nausea, or flatulence often occur with a food allergy.
The prevalence of food allergies is reported to range from 1 to 10% of the total population and depends on multiple factors. The dietary behavior in various countries plays a decisive role. Certain types of food trigger these allergies more often than others. These include nuts, wheat, milk, seafood, soy, and chicken eggs.
A blood test indicates whether the body has produced specific antibodies, predominantly IgE antibodies. In a skin test, a solution containing food protein is applied to the lightly scratched skin and observed to see whether it turns red or itchy wheals appear. If an allergy is detected, the most important treatment is to avoid the triggering food. In case of severe allergies, an emergency kit with epinephrine injection, antihistamine, and cortisone tablets is necessary, which can be applied in case of anaphylactic reactions.
